The Flower of Health is the result of a specific agricultural sector developed after a very long history of research, passion and hard work.
The first step in the tardive Radicchio di Treviso IGP’s production is represented by the act of sowing and transplantation, strictly in the Protected Geographical Indication areas established by the regulations. Simple but highly symbolic gestures, which have always accompanied man’s history
Water is the main element of the Flower of Health’s entire production cycle. Irrigation reinvigorates the roots, giving the young plants the character which they will be always known by; the fertile soil of the fields makes them grow lush and strong, ready to face the winter frost.
Nature’s toil must be humoured, supported and protected. To ensure that the tardive Radicchio di Treviso IGP’s roots breathe freely, the soil must be moved and aired, each head must have the space to grow healthy and strong. This result is the fruit of one of man’s oldest efforts: hoeing.
The tardive Radicchio di Treviso IGP’s gathering begins with the first frosts and continues without interruption until there are no plants left in the field. After the heads have been cleaned of the outer leaves and the soil , they are fastened into large bundles and submerged into the river Sile’s spring water for the last stage of the process: bleaching.
Left in the dark at a constant temperature of 12 degrees, the bundles absorb the spring water’s nutrients and properties, sprouting again. The stem’s white colour and the red tops, the crunchiness, the inimitable and exquisite taste are the particular features of this unique product. A miracle that renews itself time and again.
Finally the bundles are cleaned. Once the outer leaves are taken away, the precious bud presents itself in its typical compact and lance-shaped form, the apex closed and linked to the base by a piece of expertly carved root. The Flower of Health is finally ready to enhance our table.
